For one thing, a lot of them are based on figs. Hard to imagine? Think of Kadota figs with a bonfire lit beneath, and you’re in the general territory, but JD has other subtle things going on as well. As I say, there’s REALLY nothing else like them. If you know someone who brags about the amount of heat they like, are maybe pushing the envelope a bit, give them a nice selection of SOUTH PHILLY HA-HA HOT SAUCES. I would run out of it almost every day. The customers would come in and let me know what they thought of the package of meat they cooked the night before. It may have been too hot, not seasoned enough, too much garlic, not enough onions . . . so I would adjust my recipe to accommodate them. My boudin [Cajun sausage] was getting very popular. People were coming from surrounding towns just to get T-Boy’s boudin.
